SHOESTRING FRIES

1 quart vegetable or canola oil

2 russet potatoes, peeled

Salt and ground black pepper

In a large pot fitted with a candy thermometer, heat the oil over medium heat. You want the oil to reach 350°F.

Use a spiralizer to slice the potatoes into shoestring shapes. Once the oil is hot, add the potatoes 1 handful at a time. Fry until golden. Remove with a slotted spoon and place on a paper towel–lined plate to drain any excess grease. Hit them with a pinch of salt and pepper. Repeat with the remaining potatoes.
